Using lasers we can effectively 'inflate' atoms by moving the outer electron far from the nucleus. These highly excited atoms, known as Rydberg atoms, are surprisingly stable and display rich physics that is finding an increasing range of applications in quantum technology. In this talk I will focus on the use of Rydberg atoms to control light at the single photon level and to study phase transitions that are an analogue of biological switching.
